On the issue of not having to surround the LaTex with escape characters, I don't think mathjax supports that and I'm not sure it would be safe to do anyway as I'm not sure that everything that looks like LaTex really is.  Also there are two sets of escape characters one for inline layout and one for block layout.

On the issue of support for MathML input, this is possible with MathJax, but the support is turned off in our configuration, if we'd like to turn it on that should be opened as a separate issue. It will require some work as currently the html sanitizing code strips all the MathML tags out of any input.
